Another simple, yet healthy, dinner idea! My local grocery store has pre-cut stir fry vegetables. This package only cost me $2.75. Seriously. This isn't necessarily an official "recipe" as much as it is an idea for a simple meal.

Beef and Vegetable Stir Fry |
Ingredients
- Canola oil
- Lean steaks, thinly sliced and lightly patted dry with a paper towel
- Assorted cut vegetables
- Stir Fry sauce (I used a spicy Szechuan sauce, which was delicious, but there are so many varieties. You can also look at sodium content if that is a dietary concern)
Heat pan over medium to medium-high heat. Once it has heated for a couple of minutes, add the oil. As soon as the oil is hot, add the meat. Keep stirring until all of the pink is gone. Remove the steak from the heat. Add a bit more oil. When it has heated again, add the vegetables. Keep stirring until they are tender crisp, typically just a few minutes when the broccoli is bright green. Add the meat back in and add the stir fry sauce. Cook until bubbling hot. You can enjoy over brown rice if you wish!
