Broccoli Lemon Slaw

I have joined the Whole30 adventure and want to document some of my recipe tweaks. I especially love 5 ingredients-or-less recipes!

The inspiration for this one comes from Smitten Kitchen's Cauliflower Slaw, which I fell in love with and wanted to simplify. Enjoy!


Broccoli Lemon Slaw
3 tablespoons dried currants
Juice of a lemon (or 2 tablespoons lemon juice)
3 tablespoons olive oil
Bag broccoli slaw
salt & pepper to taste

  • Add currants, lemon juice, and olive oil to a small container and let currants soften and absorb the lemony goodness. Let marinate all day or overnight. 
  • Combine broccoli slaw and marinade in a bowl.
  • Season with salt & pepper.


This is delicious right away and even better the next day.
